Unless the bird is a bird of prey, such as a baby eagle or hawk, the bird needs grains, not meat-based foods like dog food.

they just eat whenever they are fed
a lot. mainly Herbivores, but also Omnivores.
There is no set amount of food that all birds must eat in a single day. Bigger birds need more food than smaller birds.
Do you mean: How long between the egg is laid and when the baby hatches OR how long does it take a baby to peck its way through the egg shell? Either Q, the answer will depend on the type of bird. I read that Blue birds will hatch within about a week after the mother lays it. Where as I had a Kill-Dee who sat on her eggs for almost 3 weeks---but her chicks were almost ready to run on their own within a day or two(they don't fly much).
Expired food doesn't contain so much necessary vitamins and minerals baby bird needs to grow properly. It doesn't kill the bird, but may cause some problems with chicks development.
Well, they could eat bird food, (Regular) not much though. Try looking at a pet store, they might have food right for them.
Like any other bird they eat regurgitated food from their mother ( vomit) and they eat as much as the mother decides to give them and as much as she can give up
no bread

NO! If you so much as touch a wild baby bird the mother won't take care of it and the baby will die unless you choose to care for it.

depends on the type of bird - some are dependant much longer than others

A baby bird cant harm you at all since its a baby it doesn't know anything about biting yet so don't try putting your finger in its mouth because it will get use to it and all don't carry it to much because it might die !
