You can cross-breed the plants that survived to try to retain the gene that gives them their hardy-ness to withstand the mountain climate and soil. Over-time their offspring will adapt enough that most of the sprouts will survive the season.

If a plant is put in to weather that is extreme it will slowly adapt there is a 50 or so percent chance that the plant will survive this though.

1. Natural selection will sift those members of the plant population out that are not able to withstand cold climates; only stronger or more adaptable plants will survive.

2. normally a climatic change will take place over a long period of time, allowing successive generations of plants to make small adaptations which could ensure the survival of the species. However, if a sudden, unexpected climatic change were to happen, there would be probably 0% chance that any plant would survive.

3. methods that plants use to "over winter" or survive harsh climates include. Bulbs, tubers, going dormant (like many deciduous plants), deep root systems to survive frost (or permafrost) conditions such as many grass varieties. And of course speeded up life-cycles like many annual plants - where the growing season is over within a few months and the plant over winters in the form of seeds for the new generation.
