It goes up in smoke (to coin a phrase). Smoke is composed of water vapor, carbon dioxide and other chemicals and aerosol particulates.

Incidentally, this is call the classic law of conservation of matter. For a practical every day experience it's true, but Einstein came along and showed that matter can be changed to energy and vice versa. That's what happens in an atomic explosion -- matter is converted to energy. So, really it's "Matter and energy cannot be created or destroyed, just changed in form."
