First of all, the CPU is not being connected to the monitors. The monitors will need to plug into a dedicated graphics card. Most graphics card can support 1 VGA monitor or 1 DVI monitor, 2 DVI monitors, or in rare cases 4 DVI monitors. VGA monitors use a blue connector whereas DVIs use white.

This is usually just referred to as having multiple monitors or dual monitors (if there is 2).
