Extra virgin olive oil should only be used for light cooking or saalads eg fried eggs etc

for stew /curries casseroles etc use refined olive oil or olive pomace oil.

Both these oils are healthy and better for 'proper cooking'

no it is not at all good for cooking, it should be used in raw form because when olive oil gets heated it gets toxic.
It depends what you mean by cooking! Olive oil does not cope well with high temperatures such as those required for deep frying: it will break down and acquire an acrid taste. Having said that I remember eating chips/fries made from olive oil in Spain - it was probably a mix of oils and it tasted pretty vile anyway! Olive oil is absolutely fine for quick pan-frying. The only question to ask is: do you want the specific olive oil taste as part of your dish? For example I often use olive oil when pan-frying tuna; |I think they go well together. I would never cook steaks with olive oil. For veal I use a bit of olive oil and a knob of butter. Olive oil is better for you than, say peanut oil so you may choose to use it more often in cooking. I would however recommend against using expensive virgin oil for this: a 'medium oil' is enough. If you really want the nice clean taste of olive oil, then drizzle a little bit of high quality virgin oil after cooking.

I cook with olive oil, I can't attribute any problems to its use.

Olive oil is one of the healthiest oils to cook with. It is high in mono-unsaturated fats, and low in saturated fats.

If you are worried about safe cooking fats, I would worry about lard, bacon fat, and other fats that are solid at room temperature, as they are very high in saturated fats.

In a way. Olive oil must be used at a lower temperature, so the chicken won't cook as fast and will absorb more oil in the coating, so you end up with greasy chicken. A better method of cooking the chicken would be to dry the chicken, use the oil as a coating and bake it in the oven. The advantage would be that the chicken wouldn't sit in the oil as long, and the excess fat would drain off.

To do this recipe, dry the chicken well with toweling, then dip it in the olive oil. Next, roll it in your coating mixture, then place on baking pan or cookie sheet. Cover the chicken with foil and bake about 30 minutes @350. Take the foil off, and let the chicken brown for about 5-10 minutes.

It will be tender and juicy with a crisp coating and the benefits of the olive oil.
