The beverage we have commonly come to call tea is the result of steeping the leaves of the tea tree (Camelia sinensis) in boiling water. All teas are from this common plant, it is the manner in which it is harvested and processed for market that makes the different kinds of tea.

Green - freshly picked tea leaves are streamed, rolled on mats and heated. Steaming makes the leaves pliable and de-activates the enzymes that cause fermentation. Rolling releases the flavours and heating stabilises the tea.

White - is the very young buds of the Asian tea cultivar known as "Silver Tips", harvested and blended with longer leaves and a touch of apricot flavour, designed to appeal to a wider consumership.

Besides, these tea sorts have different to some extent health benefits and properties:

No. Oolong tea and green tea are usually considered separate classes of tea.

Oolong Tea is partially oxidized, putting it somewhere between green tea, which is not oxidized at all, and black tea, which is completely oxidized.

The longer oolong tea is oxidized, the darker its brew will be. This is why people talk about green oolongs and dark oolongs as distinct types of oolong teas. Oolongs are also roasted, and this can affect the color and flavor, independently of the level of oxidation.

"Green oolongs" such as Jade Oolong and Pouchong (Bao Zhong) are technically oolongs, not technically green teas. However, sometimes companies sell them as green teas, and in appearance, they do resemble green tea somewhat, although their flavor is distinct and in other regards they resemble other oolongs more than green teas.

It depends on what you want to achieve. Green tea is very good for your metabolism and higher in antioxidants that Oolong tea. Oolong tea is good for weight loss and tooth health.

The only difference between green, oolong, and black tea is the way it has been processed after harvesting. White tea is a little bit different because of the way it is grown, but all tea is from the same plant -- Camelia sinensis. And this plant has naturally occurring antioxidants that are beneficial to human health.

No. Oolong tea is in its own category. Oolong is usually described as somewhere between black tea and green tea and has a quite distinct flavor. However, herbal oolong teas can be found; they simply have flowers, fruits, or herbs added for a dfferent flavor.

In reality all teas are green tea, but some have been fermented and others have not. All tea (not herbal tea, which is not a tea) comes from the Cameillia sinensis plant which has two sub-varieties: sinensis and assamica.

White tea, green tea, gunpowder and oolong tea are all considered "green" tea, because of the amount of fermentation they've endured. White tea and green tea such as Sencha have almost no fermentation. Oolong has partial fermentation. However all of these teas have a special compound family known as catechins in them.

Catechins are what deliver most of the health benefit from green teas. The strongest of the six catechins is known as Epigallocatechin Gallate or EGCG. Generally speaking, the more fermentation a tea has gone through, there are fewer EGCG and other catechins in it. Black teas derives most of their health benefits from theaflavins, which green teas also possess.

Oolong tea has been credited with higher levels of fat burning - most famously from Oprah. However scientific tests of this have been inconclusive. All green teas burn fat by raising metabolism by at least 4 percent. However the claims of up to 17 percent metabolic rise with oolong teas has not been proven. There is some evidence, but more work has to be done.
