If soaked, the ratio is 9 parts water to 1 part chia (or salba) and it makes a gel that can be used in smoothies or gravies or just about anything. It does not dilute the taste of food, and has an extremely mild taste. Actually the taste of quinoa is quite mild as well. Both have a slightly nutty flavor. Both seeds are great for vegetarian diets as they have protein and quinoa has all the amino acids, which is quite unusual for a 'grain'.
