There was no disparity between what was classical and what was not. Nearly everything of the time was classical therefore it became popular from its inception. In terms of instrumental classical music, that took off at the demise of the Baroque Period and beginning of the Classical period. Rising middle-class wages allowed for a wider range of audience in virtuoso performances and public orchestras. Music was a sign of prestige and therefore those who could not perform at least attended. It was one of the primary sources of entertainment besides plays. Popularity for classical music has dwindled since the 19th century. And there is little hope it will be revived through the few neo-classical artists remaining.

Today we continue the lumping process, and label anything by dead composers or musicians that are more interested in making music ultimately musically interesting (as opposed to monetarily lucrative) as "Classical", as opposed to "Pop." However, the Boston Pops perform lots of music that younger folk today would call Classical. Composers such as Gershwin or Duke Ellington, who used folk, ethnic and urban music and rhythms, are increasingly considered classical, as is the entire Jazz movement. Generally - if they teach it in a course in college, it's "Classical." To confound this further, there is a period generally called "The Classic Period", which describes Haydnmozartbeethoven. (My professor, Karl Geiringer, used this as one word, pronouncing Haydn with a powerful "khhhh" at the start).

Having been trained as a classical singer, I would say because classical musicians - who are not snobs (and there certainly are some of those) - value music that is good, and good music doesn't have to be classical. Many (not all) genre or selective singers feel their favorite music is the ONLY music, like bumper stickers that say "If it isn't country, it isn't music", or the like.
