Unless you are using fresh ground peanuts, most commercially processed peanut butters (Jif, Peter Pan, Skippy, etc.) will be shelf stable - even after opening. Follow label instructions for storage.
P.B. doesnt actually have a necessary refrigeration requirement unless you are using some sort of organic/no preservetives type that REQUIRES it...regular P.B. bought at a regular grocery, such as Skippy, Jiff, store brand, peter pan, etc...can be kept (even after opening) in a cupboard. Those will not ever go bad and your sandwich will be just fine. If indeed it is a special/uncommon type, then maybe a cold pack would be a good idea. You can store regular P.B. after opening in a cupboard for upwards of a few months, until the oils begin separating and it takes on a stale/not like fresh peanut smell...then, even though still edible, just not as tasty, you could toss it.
