There are not any specific conditions under which an equalizer is consistently correct for matching the experience of the original recording. In more detail, an equalizer as it's name implies, is designed to counter or "equalize" the effect of room and speaker conditions. Translating or "equalizing" the form of the played back sounds in an attempt to match the recording conditions. If you've ever seen a sound diagram you might be familiar with the sound wave shape. From personal experience, I have found that I get the closest match to originally, recorded sounds by using the "Dance" setting. -- Given that there are no further equalizers through which the sound is being processed. This setting is most closely matching the form of a sound wave.

When you set the equalizer on iTunes does the equalizer stay that way on the iPod even when you have the EQ setting on the iPod turned off?
The equalizer is a playback effect, and does not effect the file. When you transfer it to your iPod, the EQ setting does not transfer with it. If you want to EQ when you liste…n to it on your iPod, you will have to edit the file (using Audacity or some other audio editor) or turn on the iPod's own EQ.
