Castle names came from the areas where they were built. Today many of the standing castles still retain the names. Many of the castles we see today are not what was seen in the Middle Ages. They have been added to, decorated, and expanded. The castles often started out as wooden on a mott. We might consider the names today as the ones they may have not started with, but these are what we know them as. One of the greatest early castles is the Edinburgh Castle in Edinburgh, Scotland or Heidelberg in Germany. There is a lovely little one in Germany called Mittenburg and the city of Wurzsberg has a nice castle as well. Most large cities had a castle, but the city built up around the castle because that was where the protection and government was. London has the Tower of London which didn't start out as a prison, but the home of the King. The land that the tower is built on was also used by the Romans. There are dozens of castles and keeps all over Europe this way, so to name them is a job. I hope I more or less answered your question.
The origins of castles are really not known, except that they first appeared in the general area of France during the 9th or 10th century. Châteaux Doué-la-Fontaine is considered the oldest, but probably not the first.
