As with other countries, it depends on the region you travel to, because the foods reflect the areas surrounding them, as well as the people who lived there or migrated there. The U.S. is divided into MANY regions, all of which have their own special dishes.

Southern Cuisine includes grilled or barbecued meats, fried chicken and fish, fresh vegetables, and fairly heavy meals. Many Southerners still use lard to cook with, carrying on the traditions of their families. Cornbread is quite popular, as well as Grits cooked with salt and butter, and with or without cheese added. Many of the recipes came from the slaves that once lived in this area, who had to cook with scraps of meat, and utilize the vegetables in the gardens they worked in. This is why in dishes such as Turnip Greens, Collard Greens, and Mustard Greens, you will often find ham hock cooked in them. Fresh fruits are very popular, and often made into jams, jellies, and preserves. Figs and Peaches are very common and popular, as both are grown in Georgia, and the surrounding areas. Southerners are known for using a lot of seasoning in their cooking, making it very flavorful. Beef, Pork, Chicken, and Venison are readily available, and often hunted or raised for food on private farms, which makes them the most commonly eaten foods. Catfish is also quite popular, as it can be caught in most lakes and rivers in the South. Seafood is popular in the Southern states, along any coastlines. North Carolina, Georgia, Alabama, and Mississippi all touch either the Atlantic Ocean or the Gulf of Mexico.

Floribbean Cuisine refers to Florida and the influence the Caribbean Islands have had on it's food, known as Fusion Cooking. Fresh fish and seafood is used, as well as fresh fruits. Oranges are native to Florida, which accounts for a lot of the fruit eaten and juiced. However, tropical fruits, like mango, pineapple, and coconut are often used in recipes, or eaten fresh. The fish and seafood are often grilled or fried, and served with a variety of sauces, from Tartar Sauce, to Mango Chutney.

California Cuisine covers the entire state. It can vary from the Mexican influences towards the South, but is most often associated with extremely fresh and light dishes. California is known for Avocados, and utilize a lot of them in their dishes. Salads, sandwiches, and other cold dishes are popular. Foods are less often fried here, as in the South. Fresh seafood and fish are used a lot, due to the thousands of miles of Pacific coastline along the state. Also known for Fusion Cooking, with influences from many Cultures.

Hawaiian Cuisine, refers to all of the Islands in the Hawaiian chain. Hawaii utilizes fresh fruits and vegetables, as well as a lot of rice dishes, or rice as a side to most dishes. Loco Moco is a popular dish, it is basically a Hamburger with a Fried Egg and Brown Gravy over it. Visitors to the island are typically surprised to how flavorful the burger is. The Kahlua pig is also very popular, especially on resorts, as a way to give guests a sample of their cuisine, as well as showing off the cooking technique, which is the whole pig, cooked in a pit in the ground, Japanese-style. Hawaii's Cuisine is deeply influenced by various Asian countries, including the Philippines, Japan, Korea, China, Portugal, and Polynesia. Poi is another popular dish, and is made from the corm of the Taro root. It comes in different consistencies, from thin and soupy, to thick and dough-like. Aside from Taro roots, Sweet Potatoes, and Yams are eaten regularly. Pineapple, Bananas, Coconuts, and Plantains are very popular, both eaten fresh, and cooked into other dishes. A popular snack of the area is called Spam Musubi, which is Spam that has been marinated, placed on top of white sushi rice, and wrapped in Nori (seaweed), much like the varieties of Sushi are made.

New England States Cuisine refers to the area including Rhode Island, Vermont, Maine, New Hampshire, and so-on (the North East). This area is greatly influenced by Britain, as well as the Native Americans. These states are known for their "Hot Pots" (casseroles) as well as one-pot cookery including baked beans, chowders, and succotash. They utilize readily available foods, as other regions do. This includes little neck clams, lobster, shrimp, scallops, mussels, oysters, soft shell clams, and razor neck clams. They are most known for their Clam Chowder, made from locally harvested clams, potatoes, and heavy cream. They have 12 original varieties of apples available, as well as grape vineyards, and cranberry bogs. The grapes are used for commercial (Welch's) juice, as well as jams and jellies. They are also the ones who came up with the "Clambake", where you cook the clams outside--usually a big social event. Vermont is known for its white cheddar cheeses.

The Mid-Western States are known for their varieties of wild game, and the preparation of it. This area includes: Illinois, Kansas, Wisconsin, Ohio, Minnesota, etc. With it being colder in the Winter, typically below Zero, they have adjusted and know how to preserve meats, both by smoking, and by curing them. The rugged landscape is good for root vegetables, like potatoes, sweet potatoes, and yams. The game in this area includes Bison/Buffalo, Venison, Rabbit, Rattlesnake, Squirrel, etc. Chicago is known for its deep dish pizzas--the slices are so heavy, you have to eat them with a fork. Kansas is known for its BBQ and sauce. Wisconsin is known for its own, original cheeses--which varies from Sharp Cheddar to Gouda. Because these states are not along a coastline, they depend more on canned or preserved fish, such as Salmon, Tuna, and Herring, or locally caught Trout and Perch. They are highly influenced by the Polish, Swedish, German, and Greek cultures, due to people who moved here in the early 1900's. And more recently, they have been influenced by Latin and Asian Cuisines. Fresh fruits of the area include: blueberries, cranberries, apples, peaches, cherries. Hamburgers are also incredibly popular in this area.

Cajun-Creole Cuisine is found in the Louisiana area. They are greatly influenced by African, Native American, French, Portuguese, Indian, Mediterranean, Spanish, and Caribbean Cultures. There are a lot of one-pot dishes, the use of available seafood and meats, as well as commonly found fruits and vegetables. Rice is a staple in this cuisine, as are tomatoes, okra, carrots, celery, and onions. They also utilize a LOT of spices and herbs, including: Cayenne Pepper, Sassafras, Bay Leaves, and Parsley. Popular dishes include: Seafood Gumbo, Steamed/Boiled Crayfish, Low Country Boil (cooked outside, but contains red potatoes, corn on the cob, shrimp, crayfish, smoked sausage, and creole seasoning--typically a social gathering), shrimp etouffee, and jambalaya. This area is also known for their desserts, such as Bananas Foster, Beignets, and King's Cake. The dishes are extremely flavorful and filling.

Tex-Mex cuisine is mostly influenced by Mexico. This includes Texas, Arizona, and New Mexico. Texas is first known for their BBQ style and sauce. The influence from Mexico has introduced this flavorful, sometimes hot, style of Fusion Cooking. Fajitas, Chili con Carne, and Chili con Queso are all products of this Fusion. They are known for using large amounts of melted cheeses, beef, beans (typically black or pinto), spices, and typically serve them in flour tortillas. Nachos with Salsa for appetizers originated in Texas. They also have influence from India, and utilize such spices as Cumin in their dishes. All of the dishes can vary from extremely mild, to incredibly hot. The Texas area is also known for boasting "bigger is better", which is reflected in their serving sizes. They give LARGE servings of everything, at every meal.

Popular foods that span across the U.S. includes hamburgers, pizza, and pasta dishes (such as spaghetti, lasagna, and fettuccine). Each region DOES have their own styles and flavors, but is often enjoyed by people from across the nation, and isn't just limited to its individual regions. There are many other dishes and states, but this should give you a general idea.
