Also known as msg, it is a protein dissolver. It breaks down the proteins in the meat that holds the tissues together making it more tender. It is also a first aid tool used in ant bites, bee and jellyfish stings. Put some in your hand, spit on it and make a paste and apply it to the sting site. It removes or breaks down the poision that is in the insects venom and the pain subsides more quickly.

Although Monosodium Glutamate (Glutamic Acid) is use to enhance and tenderize the flavor of meat; it should not be consume in large quantity. ..Eating a large amount of this powder can do strange things to the body; such as cause your hair to fall out. Sensitization can follow prolonged usage of this material. No known process can diagnose the presence of sensitivity to this common molecule and further work need to be done to find a suitable means to remove this additive from the gut in the form of a pill that one could take prior to eating a meal of known or unknown origin that may contain msg.

there are a lot of disadvantages of msg in food. One of them is a biggie. It's a nuero toxin, which means it can be very toxic to the brain and cause nervous system problems. Studies show some people who were diagnosed with multiple sclerosis, whom stopped using msg recovered from there symptoms. It was basically made by the Japanese to make food taste better. I believe if the food doesn't taste good from the start, it shouldn't be eaten!

Monosodium glutamate (MSG) contains the excitatory neurotransmitter glutatamte which opens the calcium channel and triggers the neuron to fire an electrical impulse. If there is excess glutamate surrounding these neurons then they can be overstimulated generating large amounts of free radicals and inflammatory chemicals. If these neurons are overstimulated enough they will die. Even the neurons that are not killed can have permanet damage. So if large amounts of glutamte from MSG get into the brain, which it will in the areas that have no blood brain barrier, or in areas that have a defective blood brain barrier, then it can overstimulate brain cells. It has also been shown that when the blood glutamate level is high for a prolonged period that it will even seep past a supposedly intact blood brain barrier.
