Pig head is the ingredient in Latvia's pig snout.
Specifically, the pig's head may be boiled, salted or smoked. It is served with roasted or stewed vegetables, such as stewed cabbage. Fresh green apples are served separately.
There are some recipes which include the ingredient 'pig nose' or 'pig snout'. Pig snout with beans and rice, roasted snout, and a soup with pig snout are just a few examples.
A pig's snout is commonly strengthened by cartilage. This is to protect the nose from damage while the pig is feeding.
