Baptism was something you did when you joined a religion as an adult but I think the belief that unbaptised children don't go to heaven made people want to baptise their children as soon as possible. To do that parents had to make the baptismal promises on behalf of the child. At confirmation the child takes on those promises itself. Recently the Catholic Church decided (like Islam and others) that unbaptised babies do go to heaven after all. But I can't say for other Christian groups.

There are no forms of Jewish baptism. It doesn't exist in Judaism.Ritual immersion is for other reasons in Judaism, mainly for ritual purity after menstruation or certain illnesses.
It is not rude. If you don't feel comfortable attending a baptism invitation or do not feel the need to attend for any other personal/belief reasons, you do not have to.
