Because in the core of the star, hydrogen is being fused into heavier elements

this provides radiation energy that keeps the star "alive" and provides a force to prevent the star collapsing into itself.

eventually, after many million/billions of years, the hydrogen runs out in the core of the star

so no more energy can be produced, and the star swells up into a red giant

and then, depending on the mass of the star, it either goes supernova or becomes a white dwarf. Or sometimes a black hole/supermassive black hole.

Stars are mainly made up of hydrogen, which is used as a fuel to produce energy. There is a huge amount of hydrogen, but it will eventually get used up one day, and the star will begin to die out.
