i had to have my gaskets replaced ... ive heard the 3100 are known for being made with plastics gaskets ... idk

You don't. You replace a thermostat that has failed. They are meant to be replaced.

Check your coolant levels and make sure it is up to level and decent looking...Coolant (in this case) should be a nice Lime green. Engine Thermostat is probably the most likely cause of overheating...It should be replaced if you haven't already.
Check coolant level? Heater core plugged restricted, or airbound? Defective thermostat? Water pump not circulating coolant? Heater control cable not adjusted properly?
