Stroganoff comes from Russia.
I generally use white wine or dry sherry. I've even used red wine and it tastes great. One other tip, cook the mushrooms in a dry cast iron skillet until they release their ju…ices and brown before you add them to the sauce. Also a bit of freshly grated nutmeg just at the end stirred in is fabulous.
All Purpose cream won't give you the thickness or taste of sour cream. It wouldn't taste terrible though. Instead add a few tablespoons of plain yogurt, or a tsp of lemon juic…e or vinegar in with the regular cream the taste will be a bit more like stroganoff. It still won't be as thick as sour cream, you'll need to reduce it beforehand.

Yes, you can freeze beef stroganoff depending on what the sauce is made from. If the ingredients use cream, then dont add the cream to the sauce before you freeze it. Add the …cream after it has been defrosted and towards the end of the reheating process.
I would only keep Beef Stroganoff in the fridge for a couple of days. You may be able to keep it for longer if it does not have any cream in it. To be on the safe side I would… freeze it and then defrost thoroughly before reheating.
