Very little. The ships were small and held crews of 20-40 men. There were no beds for the crew so they slept where they could find an empty spot. No bathrooms or means to wash. Each man carried a knife that he used for work and eating. Water was carried in the ship hold in barrels and a bit of dried food. Much of the time the water became brackish and the food with mold. Life on the ship was hard and most of the crew were hard men doing a hard job. Imagine getting on a small ship ( about the size of a Basketball court) and not really knowing where you are going or how long it would take.
The explorers in this time had small ships so they only took what was needed. Barrels of water or ale and dried food was taken. Items to repair the ship, and other items to help the ship. The captain also kept a log and they would have a pilot with maps.
