A horses first instinct is to run. If he can't run, he will turn and fight. However, through training, horses can be taught to not run away or fight but rather stay calm when their rider or handler is calm.

they might rear up in the air. They might also run away. If they are in a herd, they will warn the others. Horses might also attack a predator.

A horse is a prey animal, so they have a flight or fight reaction to things that scare them. If they see something that they think could be dangerous to them (even if it is not actually dangerous) their first instinct is to run. If they have some reason that prevents them from running, for example if they are tied up, they will fight whatever it is that they think is going to hurt them.
