It is stored there for a while of time until it is released through the anus. Nothing much happens in it because it has already been broken down a lot from the other organs, and enzymes have been added.

By the time that food matter reaches the rectum, it's in stool form. There's no more substantial digestion. The rectum is kind of like a holding tank for stool to be contained until it can be defecated out at a convenient time.
