The suit you are referring to is the Varia Suit. You get it by defeating Flahhgara, the plant boss in the Chozo Ruins. This suit will allow you to go into high-heat areas without taking damage. This is the closest you will get to becoming fireproof, though lava and fire-based attacks will still damage you.

The only way to change your suit is to aquire a new one through the story. There are no menu options to change which suit you have equipped. The one exception to this is the Fusion Suit, which can be worn by connecting a gameboy with Metroid Fusion in it, then going to the extras menu from the title screen. The suit is purely for looks, though.
