People do not realize how important the discovery of the Americas was to the cuisine of the world. A great number of foods that we take for granted were only discovered in the sixteenth century and did not become common until later. Asian vegetables came later still. So, at the end of the sixteenth century, these foods were only starting to penetrate the European market: potatoes, tomatoes, chocolate, vanilla, yams, allspice, maize, and turkeys are all new world foods.

Also, there was no refrigeration or pasteurization. Milk did not keep unless you made it into butter or cheese. Instead of milk, recipes often called for almond milk (which is now coming back into vogue for those with milk Allergies).

People in those days made the most fascinating salads (which they called "sallets") which included fresh herbs and edible flowers.

They also did interesting things with pastry, creating elaborate (and often inedible) pastry containers for meats and stews, something between a meat pie and a beef Wellington.
