Cholesterol is made by hepatocytes or liver cells. The two main sources for hepatocytes cholesterol synthesis are recycling cholesterol form bile and making it for saturated fats. Dietary intake accounts for a small fraction, even if a person consumed no cholesterol there levels can still go up.

Procurement of cholesterol is via two routes. The body makes some of it, and the rest comes from cholesterol in animal products, such as meat, poultry, fish, egg, butter, cheese and whole milk. Food from plants - like fruits, vegetables and cereals - doesn't have cholesterol. Foods with saturated fats also cause the body to make more cholesterol.

Cholesterol formation in the body consists of a series of complicated biochemical reactions that begin with the widespread 2-carbon molecule Acetyl CoA: Acetyl CoA (C2) --> mevalonate (C6) --> isopentenyl pyrophosphate (C5) --> squalene (C30) --> cholesterol (C27).

Cholesterol is made primarily in the liver (about 1,000 milligrams a day), but also created by cells lining the small intestine and by individual cells in the body.

Most of the cholesterol in your blood is made by your body from fat so usually the fat you eat has more of an effect on your blood cholesterol than the amount of cholesterol you eat.

Fatty foods that increase cholesterol include fried foods, most fast foods, processed meats (baloney, salami, sausage etc), cheeses and sauces.

Better foods are lean meats (some beef, some pork, ham, poultry, fish), baked or grilled foods, skim milk and lowfat yogurts.
