Fish sense vibrations mainly through the Lateral Line organ, which is a faintly visible line running along the sides of fish usually from the gills to the base of the tail. The Lateral Line consists of neuromasts which are in pits or canals (depending on the fish) of scales along the line. Neuromasts are basically hairs suspended in a jelly-like substance that move when hit with a pressure change that comes with vibration. This is similar to the balance organs in your inner ear or the whiskers on animals such as mice or cats.

They use their scales.
The lateral line is a sense organ found in fish. It uses hair cells to detect movement and vibration in the surrounding water.

Shad Herring
The most common symptom is for the fish to be curved along the length of its body with spasmodic trembling. Often the fish will be either at the very surface of the water or down on the bottom. Best treatment is to leave the fish alone and in peace.

The lateral line provides a fish's sense of hearing and orientation. it contains a complex system of receptors that convert mechanical disturbances or submarine vibrations into nerve impulses. Essentially, it is a fish's underwater ears.
the lateral lines run along both sides of their body. they detect movement and vibration in the surrounding water. they are also sensitive to light and smell.
The lateral line is a system of sense organs; neuromasts situated along/in the lateral line detect movement and vibration in water. The system is important in schooling and predatory behaviour, as well as in general for spatial awareness. It allows detection of movement outside of the range of vision, or in conditions that reduce visibility. Blind fish will orientate towards movement in the same way as fish that are able to see, but disruption of the lateral line also disrupts the response to movement.

They have (inner) ears.

They associate the vibration in the water made from you tapping on the tank, to the vibration felt when the food hits the water's surface. Just a theory.
the lateral line of a fish is a sensory organ, picking up vibration in the water, alerting fish to danger or prey.
Circulation
most fish move by using muscles and fins to push the water and there bodies through the water
