In England a muffin is a yeast raised type of bread bun. It is baked in a mould and is usually flat on top and bottom with slightly bulging sides. It is not seeded but sometimes has a dusting of corn meal. It is eaten by tearing it into two halves (never cutting it) from side to side. This gives a half muffin with one side composed of the white inside and the other the baked crust. Both sides are then toasted, the baked side first, preferably in front of an open fire. Then the last side to be toasted is buttered and you eat. Butter is usually deemed to be sufficient. Honey or fruit jam if you wish.

Muffins are like cupcakes, but more versatile. You can add fruit, nuts or Chocolate Chips. Muffins can be made without the use of a mixer. They are suppose to be a little lumpy, whereas cupcakes are mixed smooth with a mixer. Muffins are typically healthier than a cupcake and muffins don't have gooey sweet frosting.

No, a muffin is not a cupcake. However, a muffin is just an ugly cupcake. Okay, serious answer: Nope. Muffins do not have icing, but cupcakes do, and cupcakes are sometimes a little "fluffier" than muffins. Muffins usually have more subtle, normal-ish flavors such as chocolate, vanilla, blueberry, strawberry, chocolate chip, etc. Cupcakes have wider varieties, such as confetti, maple, red velvet, German chocolate, etc.

A muffin mold is the same thing as a cupcake mold. It is a pan that traditionally has 12 indentations in it to hold the shape of a muffin or a cupcake. Line the molds or indentations with paper liners to make clean up a breeze.
