Do you mean...people living in the US today who make shoes in the fashion of the Middle Ages, or shoemakers who actually lived in the Middle Ages? Modern-day shoemakers have the same rights as anyone else. Middle Ages shoemakers are all dead so any rights they once had, no longer really matter.
Shoemakers were skilled craftsmen, and they were in the middle class. Shoemakers were of two types, cobblers, who repaired shoes and made inexpensive shoes, and cordwainers, who made fine shoes. Obviously, the cobblers were not as prosperous as the cordwainers, and there were doubtless a number of them who were itinerant workers, who went from village to village doing repairs for the folk. The cordwainers formed a guild in London, received the right to regulate the shoe trade in 1272, and were given a royal charger in 1439.
i think maybe they wore the same leather that they used to make the shoes :P

Shoes have changed over time because shoemakers have found different material to put on the shoe, and have found to put different types and designes of shoes.
The name given to someone who repairs shoes is a Cobbler, although cobbler are generally shoemakers by trade as well as fixing shoes.
