Nutrients are sometimes added to food to restore the nutritional aspects of the food which have been lost through processing. The addition of nutrients to some foods reduces the chances of poor nutrient status in many people. Sometimes it is mandated by government. Other times, it is a marketing tool for the manufacturers.
"Added nutrients" are usually vitamins and minerals that have been added to foodstuffs, that would not naturally have these nutrients in. E.g like adding iron to rice, since rice does not typically contain iron. Or adding vitamin C to fish.
