Although an "easy" project is relative to the knitter and his or her knowledge of knitting techniques, some of the most basic projects are squares and rectangles--washcloths, scarves, and blankets--done in the basic garter stitch.
The best first project for most knitters is either a scarf or a washcloth.
For a scarf, simply cast on the number of stitches that look about as wide as you'd like your scarf to be. It won't be exactly that width when your done, but it should be a close enough estimate and saves you having to make a gauge block. Knit all the cast on stitches all the way across the row. Turn the piece over and knit back across again. By using only knit stitches (no purls), you create a stitch pattern called "garter stitch." This stitch pattern is especially useful because unlike stockinette stitch (what one usually thinks of when picturing knitting), garter stitch does not curl. It lays flat and looks great even if it isn't blocked. Simply continue knitting each row until the scarf is as long as you like and bind off.
For a good first washcloth, try this simple pattern:
Cast on 4 stitches
Row 1: Knit across
Row 2: Knit 2, yarn over, knit across the row.
Repeat Row 2 until one edge of your washcloth is as wide as you'd like it to be.
Row 3: Knit 1, knit 2 together, yarn over, knit 2 together, knit to the end of the row.
Repeat Row 3 until you have 4 stitches left on the needle.
Bind off and weave in ends.
The stitch pattern known "Feather and Fan" or "Old Shale" is a very easy lace pattern. (To the untrained eye, it looks like it should be complicated -- but appearances are deceiving!) The pattern has a repeat of 18 stitches, and is as follows:
Row 1 (right side): Knit.
Row 2 (wrong side): Purl.
Row 3: K2tog three times, (k1, yo) six times, k2tog three times.
Row 4: Knit.

-Cast on 50 stitches on size 8 needles
-Use garter stitch or rib stitch to add length until the scarf reaches the desired length
-Cast off all stitches
-To dress up the scarf: add tassels on the ends, make stripes by changing colors, or use a fancy yarn (such as eyelash)
