In the sense of Biology, cell specialization is when stem cells (cells with no specific job) become cells that have a specific job, like muscle cells. They have a specific job to do, like how your muscle cells allow you to move.

Cell specialization is what occurs when stem cells choose a specific function within an organism and changes its form and function to a specific use. This occurs so that the organism can operate effectively at larger scales. Small organisms (microscopic) do not specialize, because they contain all the functions necessary for life within a single (or a few) cells. Larger organisms have specialized cells in order to maximize efficiency. Without cell specialization, organisms would have a more difficult time with waste removal, distribution of important nutrients and chemicals, and would require larger, less efficient cells to perform the same functions.
