The saying is that, " Fiddles dance while violins sing". The only real difference in fiddling and playing the violin is the type of music that is played. Some people would add "technique", but both require an ability to get around the instrument well. There are players of all abilites that play both styles. Usually we think of fiddling as playing traditional or folk style music.

The word "fiddle" is a colloquial term for the violin (generally), though with modifiers ("bass fiddle") it could mean some other instrument in the violin family such as a cello. To some extent, whether an instrument is called a violin or a fiddle depends on what sort of music it is being used to play; if it's folk, country, or bluegrass, it will probably be called a fiddle; if it's symphonic music it will likely be called a violin.
The verb "to fiddle" means either to play a fiddle, or to generally manipulate something. "Fiddle" in that last context is somewhat derogatory. Fiddling with a device implies that the manipulation being performed is aimless, casual, or experimental and may, or perhaps even is likely to, result in the object being left in a worse state.
