That depends upon several factors, including:

  1. Length of time from harvest
  2. Condition of waters from which it was harvested
  3. How it was handled after harvest through distribution to consumer
  4. How the consumer handled it
  5. What temperature of past and current storage

Freshly caught fish can spoil within one day if left at ambient temperatures. Refrigerated fish could last up to one week. Freezing will prevent bacterial spoilage, but the fish could eventually develop freezer burn or turn rancid.

You have to keep fish on ice. If you fish and leave the guts in and don't have a lot of ice and you get in at late afternoon it will start to turn. But if you gut it and put on ice the fish could last maybe four or five days.

You can tell when fish is spoiled by three ways. The smell, it will have a bad odor not fishy. By the color, the flesh may be an odd color for the kind of fish it is. The look, if the fish is really slimy. more than usual.

You can control fish spoilage by simply taking the fish that you don't use and then take that fish and put it in a fresh zip lock bag make sure you seal the bag real tight so the fish doesn't get freezer burn, but anyways then you put the bag in the freezer, and trust me you will definitely like the results.
