Pasteurization is a process of heating a food, usually liquid, to a specific temperature for a definite length of time, and then cooling it immediately. This is done to slow down microbial growth in food, like for instance cheese.
Milk that has been pasteurised means it has been heated to a specific temperature for a certain amount of time to kill harmful pathogens, bacteria and viruses.
That is opposed to sterilisation, which kills all lifeforms.

Some are, and some arn't. You will have to look at the label to be sure. Factory cheeses tend to be pasturised where farmhouse tend to use raw milk. For example, Davidstow Cheddar is pasturised, but Denhay Cheddar is not.
