Saturation, in this instance, refers to the state where all potential Carbon sites of double bond formation are taken by hydrogen atoms.

Polyunsaturated fatty acids are carboxylic acids (organic acids containing the -COOH g.roup) which have long carbon chains containing many double bonds. 'Poly' means many, and unsaturated means 'contains multiple bonds'. In this case the multiple bonds are >C=C<

This is a lipid which has many double bonds. It is often found in liquid form because of this. If the bonds are filled by hydrogen atoms, then it is said to be saturated and is found in solid form.

A fat is saturated when all of the carbon atoms in the fatty acid chains are bonded to at least two hydrogens. A fat is unsaturated when there is at least one double bond between carbons in the fatty acid chains, and it is polyunsaturated when there are multiple double bonds. The hydrocarbon chains of polyunsaturated fats bend at the places where there are double bonds and this causes them to have low melting points - the fat molecules do not align close together.


Whats the function of fats?

Fat is used as both an energy supply and insulation. The hump of a camel is filled with fat, which is slowly used up when there is no food to eat. Polar bears have a heavy layer of fat to protect their internal organs from the harsh temperatures of the Arctic. It is also used as a median for the transport of fat-soluble vitamins such as vitamin A, D, and K, etc. Consuming fat increases your satiety levels (feeling of fullness). Polyunsaturated fat can in fact reduce blood cholesterol, which can be beneficial for many people. The message here is not to cut fat out but to eat more healthy monounsaturated and polyunsaturated fats and less saturated fats.
