The risotto methed refers to cooking risotto, which is rice in some Italian dialect. The risotto consists of mainly one thing, not adding the cooking liquid all at once, but adding liquid to the rice little by little.
Below is a recipe for a good mushroom risotto:
6 cups of chicken broth
1/2 lb of portobello mushrooms
1/2 lb of white mushrooms
1 clove of garlic
2 tblspoons of evoo
3 tblspn of salted butter or margerine
1 1/2 cup of risotto
fresh parsley or chives
salt and pepper
1/4 cup of parmesan cheese

Risotto
There are several different ways that I've seen contestants on that show, and other cooking shows make risotto so quickly and easily. The first method, and from what I've gathered the most common, requires a pressure cooker. This is what I use in my kitchen and I normally set it to 15psi for a 7 minute cook time. But be sure to use a quick release or auto release for your pressure. It is best to cook all the vegetables separately and add them plus any cheeses/sauces to the risotto at the end.
