Prokaryotic cell, or a Prokaryote. A Prokaryotic cell lacks a nucleus and internal organelles (except ribosome). It's genetic material is a single molecule that is not membrane-bound.

The opposite is a Eukaryote which has organelles and a nucleus.

You are probably thinking of the red blood cell, though there are more kinds of cells that don't have nuclei in them or are generally quite different than the typical "cell with a nucleus" you are thinking of.
