A single reed instruments makes noise by vibrating the reed against the mouthpiece, a double reed instruments makes its noice by 2 reeds vibrating together.

When air is blown on a reed it vibrates. A single reed vibrates against a mouthpiece. A double reed is like two single reeds and they vibrate against each other. Clarinets and saxophones use a mouthpiece and a single reed. Oboes and bassoons use double reeds.
Double reed intruments are more difficult to play because they are often bigger instruments.
