Italian-style gelato is made with fruit and water (sorbetto) or dairy-based gelato is made with milk having about 3-5% butterfat milk, unlike American ice cream that uses 10-18% butterfat cream. There are other variations.
American ice cream is whipped and more airy and gelato is more churned and rich. Both taste great!
Ice creams are made of pure and fresh creams with natural flavorings. These premium ice creams has very little air added into it.

As there's not as much fat in gelato, it doesn't coat the mouth in the same way hence furthers the reason for an intense flavor Sorbet - This is a frozen dessert that is made from fruit purée and can include the flavorings of herbs and spices. It is then whipped to lighten its texture. Sorbet contains no milk.

Well the biggerst difference between gelato and ice cream is the milk used, and that fat content. Gelato hass almost half the amount of fat worked in, so not only is the taste different, but the texture is much more intense. Also, Gelato is churned much slower, so it contains about 25 to 30 percent air, while ice cream can contain as much as 50 percent air.
