The difference is colour. Brushed nickel has a hue closer to beige and brushed stainless is closer to chrome.

There is another difference, as well. Brushed nickel is easier to clean and does not show water spots and fingerprints as easily. It does not require constant polishing to look clean. While less shiny, it fits well with granite, slate, and other stone counters to give a softer look to a kitchen or bathroom.
