Both are ionic compounds of zinc containing Zn2+. The interesting thing about the gluconate salt is that it forms a complex with two gluconate ions coordinated to the central zinc atom, which is four coordinate- so is very similar to a transition metal complex, and can be consideed to be molecular even though the bonding to the metal is essentially ionic. The gluconate ions are large and "wrap around the zinc ion. As it is molecular it is readily absorbed by organisms.

Also, they have vastly different properties. Zinc conducts electricity as a solid, zinc sulfate conducts electricity only in liquid or aqueous states.
