It does what the name implies: it finds applications for you. If you have trouble finding an application, like accidentally taking off the address book off of your dock and can't manually find it in the Macintosh HD, Finder searches for it for you, and tells you how much space are in each part of the laptop. For example, it may tell you that you have 10 gigabytes of space left on the desktop, but only 300 megabytes left in the movies folder. It basically searches through every folder and everything and customizes the Mac HD to fit your needs.

The About window from the Finder menu tells you that the Finder is "The Macintosh Desktop Experience". The Finder is the default application program used on the Mac OS X and is responsible for the overall user-management of files, disks, network volumes and the launching of other applications. The Finder maintains a view of the file system that is rendered using the desktop metaphor. Files and folders are represented as appropriate icons, volumes such as hard discs and CDs are displayed on the desktop, and there is a trash can to which files can be dragged to mark them for deletion.
