Posture is important in ballet because that is what makes you look graceful and strong. A slouched or over arched back will offset the rest of you moves and you will not appear very pretty. Your posture is also what holds all your moves together.
This is actually plié. This is when you bend both knees. Make sure your knees are to the side and your back is straight. You should be making a diamond shape with your legs.
Ballet doesn't necessarily make you taller, as that is something that I'm sure you can't control. However it does help to give you a better posture, in which you hold your body in a controlled way. So you would eventually not hunch your back (which you automatically do without realising) . So I suppose that by doing ballet you would stand a little taller!
It takes practice. First you need to begin to get flexible ankles. A exercise you can practice is sitting on the floor with your back straight and bend your toes to the ground as far as possible.
