Apples are green because, apple fruit colors of red and yellow are due to anthocyanins. The green would probably be chlorophyll. Anthocyanins are one of the main pigments responsible for flower, fruit and leaf colors...

The color of an apple depends on how ripe it is. The riper the apple gets, the more red and darker in color it will appear. A green apple is an apple in the middle of bloom. The don't just "appear" green, that is the color it is depending on how ripe.

Some apples came from different trees , or maybe not ripe enough. Figure out how long it takes to grow a green apple seed and a red apple seed. From apple to apple. Then you with figure it out.

Either the acidic texture or the green leaves from a tree making it green. If you buy some from the store, sometimes they will dye the apples.
