Hi there many no stick pans are made from steel and Teflon. The pan is usually coated in a layer of teflon to stop sticken but it can be worn away by metal utensils and washing over years. Now new technology non stick pans have come out with the teflon interweven in the actual pan so it's not just a layer.

There are several types of non stick cookware. the most commonis made from teflon. some others are alluminum and stainless steel. others are Calphalon. some are ground stone.

The non-stick coating on the frying surface has worn off, and no longer provide the buffer it used to, and the egg sticks just as it would on any ordinary metal surface.
PTFE or Poly Tetra Fluoro-ethylene is a Polymer commonly used as insulation but also used to coat non-stick frying pans.
Perhaps the coating has worn off; may be better to use stainless steel pans

There really is no way to prevent the flaking that eventually comes from using non stick pans. The coating with heavy usage really only lasts a couple of years before you will have to buy new ones if you do not like the flaking.
The best brands of non-stick frying pans are cuisnart and Anolon. They are both highly rated and very popular.
