Firstly the long chains of molecules are broken down in a process known as cracking, this is when the crude oil is passed over a catalist and broken down into smaller more usable substances. These are then heated and distilled into fractions and are separated into catergories of volatility. This is known as fractional distilation. It is also known as cracking.

Petroleum gas is not liquefied at the outset. Crude oil is slowly and safely heated, which causes different components to become gases at different temperatures. These products are then distilled into the various petroleum products that crude oil produces.

Propane comes out of the process as a gas, both from processing crude oil and natural gas. It is then compressed until it becomes a liquid.

Immediately after coming to the surface, water is removed from crude oil via a simple separation based on density differences.

The first step in processing crude oil once it reaches the refinery is removal of the salts (sodium, magnesium, and calcium chloride, barium and magnesium sulfate, etc.). This step is accomplished in a unit known as an electrostatic desalter, which adds fresh water back to the oil and passes an electrical current through it.
