The independent assortment happens in the following steps in the meiosis

1. During the Pachytene stage of prophase I of the meiosis one the genes in the homologous chromosomes mixes randomly among each other by a process called crossing over and largely responsible for the variation between the siblings.

2. Metaphase 1 : The random assortment of bivalent takes place.

3. MetaphaeII : The chromosomes move randomly to the equator

Metaphase I; homologous chromosomes line up along the equator independently of each other, and either the paternal or maternal homologue may move toward a given pole. The number of different types of gametes produced is 2^n, where n is the haploid number of chromosomes.

How does meiosis introduce genetic variation into offspring?

1 by crossing over in prophase I , 2 by independent assoartment and 3 by mutations in s phase .1 by crossing over in prophase I , 2 by independent assoartment and 3 by mutations in s phase .Meiosis produces variation in gametes by crossing over & independent assortment also called reshuffling of genetic material . Such gametes after fertilization produce offspring with different characters .

The phase where the independent chromosomes move to the poles?

well, "independent chromosomes" would be more like Anaphase I from meiosis; otherwise, it would be generally Anaphase. (it is not chromosomes but chromatids though, in mitotic anaphase.)
