Purebred horses are more finicky eaters:

grass and legumes, stay away from moldy hay

Mix-breeds will eat willow, anything that looks like grass, pine fences, saplings, moldy hay (but can make them sick?), salt, apples, carrots, vegetable tops, etc.

They can eat carrots, apples maybe Pears only if they arent allergic! If they are you are in big trouble! You should consult your vet to make shore that your horse isn't allergic to a fruit you haven't given the horse before. That would be the right thing to do.

Carrots, swedes, turnips, broccoli, beetroot, celery, cabbage leaves.
Some even like corn cobs but I do not recommend them because they could choke
