Acidic Vegtables:

escarole, pimentos, tomatoes, and any vegetables processed with vinegar, such as canned artichokes, canned beets, pickles, and sauerkraut

Some non-acidic vegetables include: celery, cucumbers, zucchini, red beets (fresh), carrots, cauliflower, asparagus and leeks. Most varieties of cabbage are also non-acidic, as are fresh peas, sprouted chia seeds and avocado.

According to the research I've just done, most fresh vegetables are not considered acidic -- except for tomatoes.
