There is no episode in which Detective Stabler leaves. That drama played out Behind the Scenes. In the final episode of season 12 called 'Smoked', there is a shootout in the squad room at the end of the episode which forces Stabler to shoot someone. Before the start of filming season 13, Christopher Meloni was unable to come to a contract agreement for the next season, so he dropped out of the series. The first episode for season 13, 'Scorched Earth', Stabler never appeared, his absence was discussed by the squad to let us know that Stabler had quit due to the shooting incident.
