The first living things on earth were single-celled organisms, like bacteria and plankton. Then, came the invertabrets, like squid and jellyfish. Invertabretes were the first kinds of true animals on earth.
It is impossible for us to know which specific animal God created first, but we do know from Genesis 1 that He created the animals of the skies and seas on the fourth day of Creation. So, it would have to be an animal that fit into these categories.
Tradition states that very many kinds of living things were created at the same time (birds and fish on the fifth day of Creation, and animals on the sixth (Genesis ch.1). See also:
